This recipe is vegetarian and high in protein! It makes 4-5 servings so you can refrigerate leftovers and have them for breakfast, lunch or dinner. Serve hot or cold.

Ingredients:
½ C Cheese, grated
6 x Eggs
750g Cottage Cheese (low fat)
1 C Mushrooms, sliced
1 C Mixed peppers, chopped
1 Onion, diced
1 Garlic clove, crushed
1 Tbsp Mixed herbs
1 Tbsp Oil
Method:
Preheat oven to 180 degrees Celcius.
Heat oil in a pan. Fry onion and garlic for 2 minutes.
Add peppers, mushrooms, mixed herbs, salt and pepper. Fry until soft then remove from heat.
In a mixing bowl, whisk the eggs. Add cottage cheese and mix until smooth.
Grease a baking dish. Spread the veg mixture evenly in the dish. Pour egg mixture over the veg and sprinkle cheese on top.
Place in oven and allow to cook for 30-40 minutes (or until golden brown).
TIP: Allow the quiche to cool when you take it out the oven, it will thicken and it’s delicious!
