Egg Tortilla

If you haven't tried this Egg Tortilla yet, I can highly recommend it! It makes a well balanced meal that can be enjoyed for breakfast, lunch or even dinner. If you know me, I’m all about convenience and believe me, you do not have to spend hours in the kitchen to make something delicious AND nutritious.

Eggs are an excellent source of high-quality protein, providing all nine essential amino acids necessary for the body's functions. One large egg contains around 6g of protein making this a protein packed meal! The wrap provides your carbohydrates for energy, and the olive oil and cheese provides your fats making this a perfectly balanced meal that will keep you fuelled for hours.



Ingredients:


1 wrap

2 eggs

1 tbsp cheddar cheese, grated

1/4 onion, diced

1 tsp garlic, crushed

1/4 pepper, chopped

1/2 tbsp olive oil

1 tsp mixed herbs

salt & pepper



Method:


1. In a small bowl, beat eggs. Season with mixed herbs, salt & pepper.


2. Heat olive oil in pan on medium heat. Fry onion, garlic and peppers until soft. Pour over the beaten eggs and top with cheese. 


3. Place wrap on top. Allow egg to cook for a few minutes. Once cheese has melted and egg is cooked, flip the pan over onto a plate. Roll your wrap up and enjoy!


Tip: You can add any free veg to your tortilla! Things like spinach, mushrooms, or tomato also goes well.
