French toast (“eggy bread”) reminds me of my childhood. I changed these up slightly and made them high protein. Ready in less than 10 minutes and so tasty! Give them a try and let me know what you think.

INGREDIENTS:
2 eggs
2 slices of bread (brown/ wholegrain)
1/2 cup plain yogurt (low fat)
1/2 cup blueberries
1 tsp honey
1 scoop protein powder (optional)
METHOD:
Whisk eggs and pour into square dish for soaking.
Soak bread for a few minutes on either side until all egg is absorbed.
Heat a non-stick frying pan and fry bread for a few minutes on either side until golden.
Top with yogurt, blueberries and honey.
Tip: Add protein powder to yogurt for extra protein (optional).
