High Protein French Toast

French toast (“eggy bread”) reminds me of my childhood. I changed these up slightly and made them high protein. Ready in less than 10 minutes and so tasty! Give them a try and let me know what you think.

INGREDIENTS:


  • 2 eggs

  • 2 slices of bread (brown/ wholegrain)

  • 1/2 cup plain yogurt (low fat)

  • 1/2 cup blueberries

  • 1 tsp honey

  • 1 scoop protein powder (optional)


METHOD:


  1. Whisk eggs and pour into square dish for soaking.

  2. Soak bread for a few minutes on either side until all egg is absorbed.

  3. Heat a non-stick frying pan and fry bread for a few minutes on either side until golden.

  4. Top with yogurt, blueberries and honey.

Tip: Add protein powder to yogurt for extra protein (optional).
