MINCE STUFFED PEPPERS


Not sure what to make for dinner tonight? Don't worry, I've got you covered with these delicious mince stuffed peppers! This recipe makes 2 servings.



Ingredients:


  • 2 Large Peppers

  • ½ Onion, diced

  • 250g Lean Beef Mince

  • 1 clove of garlic, crushed

  • 1 tsp Paprika

  • 1 tsp Cayenne Pepper

  • 1 tin Tomato & Onion mix

  • 1/4C beef stock

  • 30g Cheese, grated

  • 1 C Lentils (tinned)


Directions:


  1. Preheat oven to 180ºC.

  2. In a pan, fry onions and garlic until soft. Add mince, paprika, and cayenne pepper. Fry until brown.

  3. Add tomato and onion mix, and chicken stock. Turn down the heat, cover, and let the mixture simmer for 30 minutes (until the mixture has thickened).

  4. Cut the peppers in half and clean out the seeds. Place peppers on a greased tray and bake in the oven for 20 minutes.

  5. Once the mince mixture has thickened, add the lentils (after about 30 minutes).

  6. Remove the peppers from the oven and fill the peppers with mince. Top with cheese.

  7. Roast the stuffed peppers in the oven for another 10 minutes.

  8. Enjoy!
