ROASTED BUTTERNUT & CHICKPEA SALAD

Try my quick & easy roasted butternut & chickpea saladšŸ˜ This salad is well balanced & high in fiber so will leave you feeling satisfied for hours. Ready in less than 10 minutes and packed with flavour!

INGREDIENTS:


  • Lettuce

  • Tomato, diced

  • Cucumber, diced

  • Butternut, roasted

  • Chickpeas, roasted

  • Red onion, diced

  • Avocado, cubed


DRESSING:


  • Plain yogurt, low fat

  • Lemon juice

  • Salt & pepper


METHOD:


  1. Roast butternut and chickpeas in the oven.

  2. Place salad ingredients in a bowl and top with roasted butternut and chickpeas.

  3. Serve with yogurt dressing and enjoy :)
