INGREDIENTS:
Lettuce
Tomato, diced
Cucumber, diced
Butternut, roasted
Chickpeas, roasted
Red onion, diced
Avocado, cubed
DRESSING:
Plain yogurt, low fat
Lemon juice
Salt & pepper
METHOD:
Roast butternut and chickpeas in the oven.
Place salad ingredients in a bowl and top with roasted butternut and chickpeas.
Serve with yogurt dressing and enjoy :)
