Tofu Stir-Fry

I've been experimenting with and including a lot more Tofu in my diet since living in the van. Not only is it a great source of protein but it also tastes amazing and is very cost-effective.


Here's an easy recipe that's ready in less than 20 minutes and only requires one pan! Give it a try and if you want more one pan, easy and delicious recipes, be sure to join my Recipe Library.




INGREDIENTS:

(serves 2)



  • 160g egg noodles

  • 1 tbsp sesame oil

  • 500g tofu

  • 2 cups mixed stir-fry veg

  • 1 tsp garlic, crushed

  • 1 tsp ginger, crushed

  • 1 tsp honey

  • 4 tbsp soy sauce

  • 1 lime, juiced


METHOD:


  1. Cook noodles according to instructions on packet.

  2. Drain the tofu. Pat dry using paper towel. Cut the tofu into small cubes.

  3. Heat olive oil in a pan. Add the tofu and 1 tbsp soy sauce. Fry, stirring every minute or so until the tofu is nicely browned on all sides and the moisture has cooked off (about 8 to 10 minutes).

  4. Add the garlic, ginger, mixed veg and stir-fry for a few minutes.

  5. Add the honey, remaining soy sauce, sesame oil and lime juice, mix it all together then add the noodles. Mix well and heat through.

  6. Enjoy!
